Mexican Grilled Pizza with Lime Sour Cream

Pizza Friday is a weekly tradition at my house, but lately the weather’s been so hot, I can’t bring myself to turn on the oven, let alone get it hot enough for pizza. So, this week I took the heat outdoors and cooked our pizza on the grill. Mexican Grilled Pizza with Lime Sour Cream is piled high with cheese, chorizo, red onion, black beans, corn, tomato, cilantro and a tangy, lime-flavored sour cream. It’s delicious, and my kitchen stayed cool. Perfect.  Read More »

Gluten Free Key Lime Poke Cake

There’s something about hot, summer weather that makes me crave Key lime pie. In this case, Florida came to me via a recipe for Gluten Free Key Lime Poke Cake.  Read More »

Crockpot Hawaiian Luau Pork with Quinoa & Brown Rice

My brother lived in Waikiki for a few years, and I was lucky enough to get to visit him, AND to go to an ‘authentic Hawaiian luau celebration” with my family while we were there. I put that in quotes because who knows how authentic it really was – people from 200 years ago are probably looking down and laughing at us – but oh man, the food –pit-roasted pork, deliciously ripe pineapple . . .  Read More »
