"Big Game" Calzones

When I think of Sunday’s big football game, I think of food. Not the game, the players or even the half-time show. For me, it’s all about the food. Last year I made Whole Wheat Pizza Bites that went over like gangbusters the day of the big game. So, this year I decided to do something along the same lines, but this time I turned the whole wheat pizza dough into mini calzones filled with ground beef, onions, mushrooms and cheese. These tasty hand pies can be dipped into warm pizza sauce or marinara or eaten plain – although I think it may be an unwritten rule that all foods related to watching the big game must be dipped.  Read More »

Bow Tie Pasta with Chicken and Asparagus in Lemon-Cheese Sauce

It’s finally springtime and our faithful root vegetables have done their job and gotten us through the tough winter months. Now, bright green vegetables are popping up all over grocery store produce aisles, with fresh asparagus being one of my all-time favorites. I love to roast it, keep it raw and shave it into salads, steam it and grill it. I even grow it in my garden just to have my own supply in the early months of the season. This Bow Tie Pasta with Chicken and Asparagus in Lemon-Cheese Sauce is another way that I like to incorporate asparagus in a light, good-for-you pasta dish. Read More »

Luck ‘O The Irish Brownies

As luck would have it, I have the perfect recipe to help you celebrate St. Patrick’s Day – Luck ‘O The Irish Brownies. These brownies taste amazing and may even have you dancing a jig after one bite. They’re made with Hodgson Mill Brownie Mix with Whole Wheat Flour and Milled Flax Seed, so you know right away that they’re going be better for you than your average brownie – 100% whole grains will do that for you. Next, a tasty cream cheese batter that’s flavored with Irish liqueur is swirled into the deeply chocolate whole wheat brownie batter which creates a cheesecake-like top to the brownies. Even though these brownies have an adult spin with the liqueur, the flavor isn’t overwhelming and can be omitted and replaced with extra vanilla extract if you’d prefer. So, turn your oven on to 350˚F – we have a ‘wee’ bit of baking to do Read More »

Southwestern Baked Pasta

I think casseroles were invented for busy people – and rightly so. They’re easy to put together, use a minimal number of dishes and generally make enough food for more than one meal. This Southwestern Baked Pasta fits all of those descriptors, and it certainly tastes great. The bonus item with this casserole is that it’s healthier for you than most traditional casseroles because it’s made with Hodgson Mill Whole Wheat Penne Pasta. If you’re like me and shy away from spicy foods, never fear; this recipe has all of the warm flavors of Southwestern food, but isn’t the least bit spicy – especially when you dollop a little sour cream on top. On the other hand, if you‘d like a little more heat, you can adjust the spiciness without any trouble. Read More »

Multi Grain Cereal with Dates, Orange and Cinnamon

In this Multi Grain Cereal with Dates, Orange and Cinnamon recipe, Medjool dates are stirred into the hot cereal as it cooks, slowly dissolving into the grains and thereby, along with a bit of honey, adding sweetness to the recipe. Once the cereal has finished cooking (in about 3 minutes), some orange zest and juice and a dash of cinnamon are swirled into the pot to make things even more flavorful. A drizzle of honey, along with a few diced dates and a sprinkling of sliced almonds goes on top right before serving, making for a very fast, healthy and delicious breakfast that, thanks to all the healthy grains, will easily hold you until lunch. That’s great for kids at school as well as adults who would rather not have to head to the snack machine hours before lunch. Read More »
