Easy Homemade Polenta: A How-To

Polenta to the rescue! It’s simple to make, as long as you have some time to pay attention, but once you’ve got a batch, it makes a perfect base for many dishes and sauces — including my farmer’s market largesse. It’s also a tasty alternative to pasta, so I like to use it to shake up my routine. I especially love the contrast of the bright, smooth, melt-in-your-mouth polenta, a sprinkling of rich, nutty parmesan cheese and a twist of black pepper against fresh crisp vegetables and tangy tomato sauce. Banana-Nut Whole Wheat Cookies with Maple Icing

I found this recipe for Banana-Nut Whole Wheat Cookies with Maple Icing a while back but I never seemed to have brown bananas around when I had time to bake. Well, low and behold, the fruit basket offered up some over-ripe bananas the other day. It just so happened that it was nap time and my schedule was free, so out came the mixing bowl and I was ready to go. I opted to make these cookies, versus banana bread or Banana Pecan Cake with Warm Chocolate Sauce – traditional brown banana outlets in my family, because this recipe intrigued me in several ways. First, the banana is mixed with the butter, chilled and then cut into the flour – like a crumb topping or pie crust. Second, it uses 100% Hodgson Mill Whole Wheat Flour in the dough – no white flour at all. And third, it calls for a maple icing on top – not a flavor I had combined with bananas before. Summer Harvest Pasta with Mascarpone Meatballs

We’re settling into September, but that doesn’t mean garden fresh produce should be hard to find. Late summer is all about zucchini, peppers, tomatoes and eggplant – all of which are in this flavorful Summer Harvest Pasta with Mascarpone Meatballs. The array of fresh vegetables in this recipe is the first thing that caught my attention. I loved the idea of incorporating all of them into a delicious sauce to serve over Hodgson Mill Whole Wheat Bow Tie Pasta. The second thing that piqued my interest – and got my mouth watering – was the thought of making mascarpone meatballs. If you’re not familiar with mascarpone, it’s an Italian style cream cheese- not quite as tangy as American cream cheese – more velvety smooth and heavier on the cream side. It’s a bit of a gourmet ingredient and this was the first time I had seen it incorporated into something like a meatball. Back-to -School Cookies

I love the idea of my kids having a homemade cookie treat after school, but I really love the idea of my kids eating a cookie that’s made with healthy ingredients. So, as we started collecting what we needed, I reached for my bag of Hodgson Mill Whole Wheat Flour. These cookies are packed with lots of good things, so I knew that mixing in some whole wheat flour would go unnoticed – if I were making them alone. Hmmm… my kids were helping me make these cookies. How would the addition of whole wheat go over? Even though my children know that whole wheat is good for them, sometimes they balk when I add it to certain beloved foods – cookies being one of them. So, with my back up argument about how whole wheat is healthy on the tip of my tongue, I set it out as an ingredient, gave a measurement to my oldest girl, watched her mix it into the dough and… that was it. No one groaned or moaned even a little. Much to my delight, I believe that whole wheat is finding its place in my house – even in cookies. All three of my girls watched the Hodgson Mill Whole Wheat get mixed into the dough and no one blinked an eye.
