I’ve been experimenting. My philosophy is, start with good ingredients that you love, and whatever you make can’t be all bad. (Within reason: I’m not advocating for shrimp in chocolate sauce or anything.) But how about sweet potatoes, with rosemary and goat cheese? Sign me up. I knew I was getting close to something great with this pie when one of my taste testers said, “Oh, wow. I could eat this several times a day.” Whoohoo! Read More »
This is one of the quickest recipes I’ve ever made. Just seven ingredients, half of which can be found at the farm stand (zucchini, cilantro, shallots, and cherry tomatoes), and it will be on the table in under 30 minutes, with only 10 minutes of stove time. Read More »
This salad starts with wholesome al dente Hodgson Mill Whole Wheat Spaghetti or Hodgson Mill Gluten-Free Spaghetti combined with crunchy slivers of chopped cabbage and carrots, crisp chunks of snow pea pods, green onions, fresh cilantro, and sesame seeds. Toss it all up with a fresh, clean dressing made with toasty sesame oil, soy sauce, and tangy vinegar. Yum. Read More »
One of my girls requested grilled pineapple and chicken kabobs, so the main dish was taken care of, but I needed something to round out the meal. The winter in St. Louis was so mild this year that most all of my herbs managed to stay alive in the pots on my deck. They’ve been greening up and leafing out all over the place for weeks and I have been itching to have a reason to use them. This sweet bell pepper, lemon, herb, feta and Hodgson Mill Whole Wheat Bow Tie Pasta salad was the perfect answer. It’s quick, full of flavor, made good use of my fresh herbs and went perfectly with the grilled chicken we were having. I love it when things work out this way! Read More »
Back in December I shared my favorite Hodgson Mill winter breakfast, Blueberry Swirl Multi-Grain Hot Cereal with Milled Flaxseed and Soy, that I eat when the weather is cold and I need a hot, healthy start to my day. Well, now that the sun is warming things up and the windows are open, it’s time to switch over to my favorite summer breakfast- a creamy bowl of yogurt topped with a drizzle of honey, a handful of raspberries or strawberries and a generous scoop of the best granola ever- Hodgson Mill Crunchy Cinnamon Wheat Germ Granola. I had the best muffin a few weeks ago– a lifesaving muffin. I was on a road trip, driving through Michigan, and having a really hard time finding quick road food that was not covered in cheese, or deep-fried, or both. I stopped at a little diner and the sign at the front advertised “Rise and Shine Bran Muffins” packed with pineapple chunks, apples and raisins, and it was like someone turned on the sun in the middle of the night. Night and day, muffin, you are the one . . . .
Now that it’s getting even darker and colder outside, I’ve been thinking about this muffin. And a tropical beach. But I digress…. I thought, ‘I can make that muffin! I’ll focus on the tropical flavors, and add a little texture with Hodgson Mill Multi Grain Cereal with Flaxseed and Soy.’ Read More »
Hodgson Mill Multi Grain Hot Cereal with Milled Flaxseed & Soy is even better when I turn it into Blueberry Swirl Multi Grain Hot Cereal with Milled Flaxseed & Soy. I think it takes longer to say the name than it takes to actually make. It’s so easy. It’s not even really a recipe-more like a nudge in the blueberry direction. But that’s what’s so perfect about this breakfast: easy, healthy, fast and delicious. Read More »
