Fresh Blueberry-Oat Bars

Freshly picked blueberries are my husband’s favorite summertime fruit. Each time we go to our local blueberry patch, we make sure to pick an extra pailful of blueberries, so he has plenty to snack on. Because these berries are so prized, whatever I make with them needs to be top-notch.  Read More »

Quinoa & Brown Rice BBQ Chicken Salad

As soon as the weather gets warm, I start thinking about salad for dinner. Not just a side salad, but one that’s filled with so many good things that it becomes a main meal. This Quinoa & Brown Rice BBQ Chicken Salad is that type of salad. It’s made with Hodgson Mill Garlic and Herb Quinoa & Brown Rice, fresh corn, black beans, red bell pepper, cilantro and roast chicken. This combination alone is pretty tasty, but don’t stop there.  Read More »

Italian Ultragrain® Spaghetti Frittata

Breakfast for dinner is always a popular choice with my family, but sometimes I’m hungry for a meal that’s more substantial and nutritious than the usual pancakes or waffles we fix. On occasions like this, I turn towards frittatas; they include eggs (which make them breakfast-like) and other savory ingredients such as cheese, vegetables and sometimes meat.  Read More »

Coconut Lime White Chocolate Oatmeal Cookies

Baking saves my sanity some days. After playing the umpteenth game of Uno® (and usually losing), my brain needs to do something creative. What better way to be productive and keep my little guy entertained than to bake cookies? All I have to do is get out a bag of chocolate chips and my kitchen side-kick is washed up and pulling his chair over to the counter to start cooking. Read More »

Spring Woods Pasta

I was inspired to make this dish when I was walking through woods a few weeks ago, in early spring. When I got back to my kitchen, first I took off my muddy shoes, and then I got to work figuring out how to capture the smell of things growing, or getting ready to-- that amazing combo of earthy and fresh, like a garden that’s just been planted. Earthy flavors like sausage, mushrooms, and garlic balance with bright new spring tastes like asparagus, peas, fresh herbs and lemon zest.  Read More »

Cinco de Mayo Conchas

Happy Cinco de Mayo! If you’ve ever seen these delicate sweet buns in Latin American bakeries (usually big and flat with pretty colored toppings and neat designs swirled into the top,) like me, you may have wondered how on earth they were made to look that way. And if you’re like me, you probably bought several, ate too many– and then wondered if you could make them yourself!. Read More »
