Gluten Free Chocolate Tarts with Chocolate-Hazelnut Mousse

I will make no apologies for the decadence of this recipe. Sometimes, baking needs to be an out-and-out splurge – even gluten-free baking. (Calories don’t count on Valentine’s Day, right?) I just adore the combination of hazelnut and chocolate.: chocolate hazelnut spreads, Baci® chocolates, anything that combines the sweet nuttiness of hazelnut with dark, rich chocolate. . . I can’t resist it. I’ve tried.  Read More »

Chocolate Studded Oatmeal Bars

When it comes to home baking, quality ingredients make all the difference. Take these Chocolate Studded Oatmeal Bars, for example. They’re made with Hodgson Mill Whole Wheat Flour and Scharffen Berger Semisweet Chocolate Chunks. Sure they would be good with run-of-the-mill flour and chocolate chips, but my philosophy has always been that if you’re going to take the time to make something from scratch, you want it to turn out great. Therefore, start with great ingredients. Because these bars include Hodgson Mill whole wheat flour (the entire bran and germ are stone ground, preserving all of the grain’s natural nutrients and great taste) and 62% cacao chocolate chunks; they’re immediately transformed into something so much better than your average cookie. Read More »

Mini Whole Wheat Banana Pancake Muffins

I used Hodgson Mill Whole Wheat Pastry Flour in this recipe because it’s more finely ground and gives the muffins a lighter texture than regular whole wheat flour does. But, I have a feeling Hodgson Mill Whole Wheat or Hodgson Mill White Whole Wheat would work just as well. I also threw in a half cup of mini chocolate chips just for kicks. They’re optional, but a tasty way to get a little chocolate in the morning. You’ll need about two browning bananas, too. Read More »

Cherry-Chocolate Whole Wheat Bread

This recipe for Cherry-Chocolate Whole Wheat Bread begins with a box of Hodgson Mill Honey Whole Wheat Bread Mix. The lightly sweet, whole wheat dough is the perfect background for the tart, brandy-soaked cherries and milk chocolate chunks. And Hodgson Mill uses all-natural ingredients in all of its products including this bread mix, so my from-scratch mantra is intact – just simplified. I love it when that happens. Read More »

Back-to -School Cookies

I love the idea of my kids having a homemade cookie treat after school, but I really love the idea of my kids eating a cookie that’s made with healthy ingredients. So, as we started collecting what we needed, I reached for my bag of Hodgson Mill Whole Wheat Flour. These cookies are packed with lots of good things, so I knew that mixing in some whole wheat flour would go unnoticed – if I were making them alone. Hmmm… my kids were helping me make these cookies. How would the addition of whole wheat go over? Even though my children know that whole wheat is good for them, sometimes they balk when I add it to certain beloved foods – cookies being one of them. So, with my back up argument about how whole wheat is healthy on the tip of my tongue, I set it out as an ingredient, gave a measurement to my oldest girl, watched her mix it into the dough and… that was it. No one groaned or moaned even a little. Much to my delight, I believe that whole wheat is finding its place in my house – even in cookies. All three of my girls watched the Hodgson Mill Whole Wheat get mixed into the dough and no one blinked an eye. It just goes to show, that including healthy foods in our daily lives makes an impression on children, and instead of being something to complain about, it becomes normal. Very cool. Read More »

Cherry-Chocolate Whole Wheat Bread

Nope this is not a dessert. This was my breakfast this morning; a lightly toasted slice of whole wheat bread with chocolate chunks and cherries with a smear of whipped cream cheese and fresh raspberries on top. I ate it all – every last whole wheat crumb. It was delicious and guilt-free since it’s made with Hodgson Mill White Whole Wheat Flour as well as cherries - which fall squarely into the “good for you” category. Read More »

Double Chocolate Whole Wheat Whoopie Pies

I can’t begin to tell you how much my children love these whoopie pies. The attraction began with the chocolate cookie layers (they are my kids after all) and the pink frosting and sprinkles sealed the deal. Several sticky mouthfuls later, and a new cookie relationship was born. I can’t say I blame my kids – I think these taste great, too. And the cute cookies have been a requested afternoon snack for the past few days. I’m pretty sure I heard a “whoopie” or two as they were being eaten. I didn’t even bother to tell the kids that I had mixed some wholesome Hodgson Mill Whole Wheat Flour into these tasty little treats. The bumped-up nutrition they’re getting in each bite is my happy little secret. Read More »
