Bow Tie Pasta with Bacon and Mushrooms

A plateful of hot pasta covered in a delicious sauce served with fresh bread and a green salad is my idea of a great dinner. People pay a lot of money at restaurants for this kind of meal when they could easily make something just as good, if not better, at home. This recipe for Bow Tie Pasta with Bacon and Mushrooms is the perfect example of this kind of meal. It begins with healthy, 100% whole grain Hodgson Mill Whole Wheat Bow Ties -not something found on most menus and so much better for you than regular white flour pasta. The bow ties get tossed together with fresh mushrooms and a creamy, bacon-flavored tomato sauce that comes together in less than 30 minutes. Creamy Turkey Lasagna with Spinach and Mushrooms

What’s one of the best parts about Thanksgiving dinner? You got it – the leftovers. I intentionally roast a bigger turkey than we need to make sure that I’ll have plenty of leftovers for sandwiches and to use in other recipes. Butternut Squash Macaroni and Cheese

I’ve combined two of my favorite comfort foods – mac and cheese, and roasted butternut squash. I love how the butternut squash adds tons of Vitamin A and C, along with extra creaminess and its bright orange color, to the sauce. Nothing welcomes in chilly fall weather like a big bowl of homemade soup, and this lasagna recipe is one of my absolute favorites. I have a new favorite pasta dish – Whole Wheat Fettuccine with Portobello Mushrooms, Caramelized Onions and Goat Cheese. You could probably call the recipe Stinky Sneakers with Portobello Mushrooms, Caramelized Onions and Goat Cheese and it wouldn’t matter one bit to me – the combination of the latter three ingredients tastes that amazing. Summer Harvest Pasta with Mascarpone Meatballs

We’re settling into September, but that doesn’t mean garden fresh produce should be hard to find. Late summer is all about zucchini, peppers, tomatoes and eggplant – all of which are in this flavorful Summer Harvest Pasta with Mascarpone Meatballs. The array of fresh vegetables in this recipe is the first thing that caught my attention. I loved the idea of incorporating all of them into a delicious sauce to serve over Hodgson Mill Whole Wheat Bow Tie Pasta. The second thing that piqued my interest – and got my mouth watering – was the thought of making mascarpone meatballs. If you’re not familiar with mascarpone, it’s an Italian style cream cheese- not quite as tangy as American cream cheese – more velvety smooth and heavier on the cream side. It’s a bit of a gourmet ingredient and this was the first time I had seen it incorporated into something like a meatball. Steak and Salsa Verde Pasta (aka “Spaghetti Western”)
