I think casseroles were invented for busy people – and rightly so. They’re easy to put together, use a minimal number of dishes and generally make enough food for more than one meal. This Southwestern Baked Pasta fits all of those descriptors, and it certainly tastes great. Soccer season has started and we’ve had to surrender our schedules to keep up with practices and games for two of our girls. Zucchini-Chocolate Chip Muffins

Part of the reason I like to grow zucchini is to make this muffin recipe. The combination of Hodgson Mill Naturally White Flour, Hodgson Mill White Whole Wheat, shredded zucchini, mini chocolate chips and toasted walnuts makes for a perfect breakfast or snack muffin. Whole Wheat Couscous with Lemon, Peas and Chives

I think part of the reason this recipe went over so well is because I used Hodgson Mill Whole Wheat Couscous with Milled Flax Seed and Soy. The added flax and soy give the couscous a little more texture, not to mention the added health benefits. Foods that are mushy, like avocados, are not my husband’s favorites. So I wanted to make sure I packed this dish with as much flavor and crunch as possible. Lavender Shortcakes with Strawberries and Cream

The Hodgson Mill Whole Wheat Pastry Flour in the shortcakes adds a subtle wheat flavor and gives them a feather-light texture that makes them so tender they practically melt in your mouth.
