Banana Pecan Cake With Warm Chocolate Sauce

What can you do with the brown bananas that sit on your counter top? Think tender, sweet, banana-bread-like cake with a cruchy sugar-pecan top. Then picture warm chocolate sauce drizzled over a piece and then swoon a little as you drop a mental dollop of whipped cream on top. As decadent as this sounds, it’s pretty easy and includes a boost in nutrition from Hodgson Mill Whole Wheat Pastry Flour. Whole wheat pastry flour is so finely ground that its texture is hardly noticeable in most recipes and is easy to incorporate into this banana cake without any complaints from the little ones. Repurposing over-ripe fruit + whole wheat goodness = cake that tastes great and gets more whole grains onto your plate. Sounds good to me. Read More »

Baked Apple Peanut Butter Steel Cut Oats

Sweet baked apples with cinnamon and maple syrup, a hint of rich, salty peanut butter, and tender nutty-tasting Hodgson Mill Steel Cut Oats suspended in just enough creamy custard—this might be the most perfect breakfast known to man. Best of all, it makes about 6-8 servings, and leftovers heat up marvelously in the microwave, or wrapped in foil and heated gently in the oven. I could see myself making this recipe for a breakfast buffet, since it’s much easier to serve than regular oatmeal, and more forgiving if it’s cooled a bit. Read More »

Elegant Chicken and Mushrooms over Hodgson Mill Whole Wheat Spaghetti

This is no dainty dish. The Hodgson Mill Whole Wheat Spaghetti with Milled Flax Seed, cooked al dente, is a delicious, wholesome complement to the tender chicken, the mushrooms, fragrant from their simmering in sherry, and the light and creamy sauce, all spiked with bright, snappy green parsley. It’s all much heartier than it appears, and really good on a cold winter evening. This would be a great dish for a special family dinner, a celebration, or just to shake up your normal weekday meal routine. Add a green salad, or another veggie on the side, and it’s a full meal. Read More »

Mom’s Famous Cinnamon Rolls

I’ve been making these cinnamon rolls for more than ten years and have become a bit famous for them with my family, friends and overnight house guests. They are simply wonderful and the epitome of comfort food. What makes these rolls so outstanding is the dough. It all begins with Hodgson Mill Best For Bread Flour. This high protein, high gluten flour allows the dough to become soft, supple and easily manageable. It’s a baker’s delight to work with– not too sticky, not too firm, rolls just right and slices like a dream. As the rolls bake, they turn into tender spirals of sweet, sticky cinnamon heaven. Hot from the oven, a delicious cream cheese frosting is spread on top. Cold January mornings never tasted so good.  Read More »

Rise and Shine Tropical Multigrain Muffins

I had the best muffin a few weeks ago– a lifesaving muffin. I was on a road trip, driving through Michigan, and having a really hard time finding quick road food that was not covered in cheese, or deep-fried, or both. I stopped at a little diner and the sign at the front advertised “Rise and Shine Bran Muffins” packed with pineapple chunks, apples and raisins, and it was like someone turned on the sun in the middle of the night. Night and day, muffin, you are the one . . . . Now that it’s getting even darker and colder outside, I’ve been thinking about this muffin. And a tropical beach. But I digress…. I thought, ‘I can make that muffin! I’ll focus on the tropical flavors, and add a little texture with Hodgson Mill Multi Grain Cereal with Flaxseed and Soy.’ Read More »

Steel Cut Oats: Make Once - Eat All Week (Three Topping Ideas Included)

I think by now the excesses of the holidays are firmly behind us, and resolutions– like health and fitness and saving money–stretch ahead. I’d like to suggest one proverbial stone for these two birds—and that is Hodgson Mill Steel Cut Oats. They’re incredibly healthy and filling, full of protein and fiber– I definitely notice that the days I start with whole grains like steel cut oatmeal, I can hold out better ‘til lunch. It’s also cheap to prepare; plus you can make enough in one go to last for the week, (like I’m about to describe) and using different toppings helps keep it interesting. Voilà–cook once, and you’ve got hot breakfast for the week. Read More »

Pomegranate-Spiced Couscous

This pomegranate-spiced couscous recipe is wonderful. It’s filled with tart pomegranate seeds, sweet golden raisins, warm spices, a sprinkling of cilantro and nutritious Hodgson Mill Whole Wheat Couscous. It’s bright, flavorful, good for you, and can be ready in five minutes. It pretty much checks off all the things I look for in a great recipe. I love to eat it for a light lunch or serve it as a side dish to go along with roasted chicken or pork tenderloin. Read More »

Brown Sugar Cinnamon Waffles with Blueberry-Maple Sauce

They are super tasty on their own with a little butter and maple syrup, but even better served with some blueberry maple sauce (see recipe below). I love that these waffles are filled with whole grains like oatmeal and Hodgson Mill White Whole Wheat Flour. Not only are my kids thrilled to have a delicious hot breakfast, but I can start their day off with good nutrition to boot. Let’s hear it for us Moms! Read More »

Hodgson Mill Meat Loaf with Flax Seed

She may not be the prettiest girl at the ball, but this meat loaf is pretty easy on your kitchen and your overtaxed mind and wallet. And just because the recipe’s simple doesn’t mean it has to be boring. This meat loaf is really flavorful, even when I subbed in ground turkey for half of the beef. (I don’t eat a ton of red meat . . . buying two pounds of beef was just too much for me to fathom.) And this meatloaf uses Hodgson Mill Milled Flax Seed, which is not only a super food full of omega-3s, but also helps to keep the loaf together, like an egg does. Read More »
