Bow Tie Pasta with Bacon and Mushrooms

A plateful of hot pasta covered in a delicious sauce served with fresh bread and a green salad is my idea of a great dinner. People pay a lot of money at restaurants for this kind of meal when they could easily make something just as good, if not better, at home. This recipe for Bow Tie Pasta with Bacon and Mushrooms is the perfect example of this kind of meal. It begins with healthy, 100% whole grain Hodgson Mill Whole Wheat Bow Ties -not something found on most menus and so much better for you than regular white flour pasta. The bow ties get tossed together with fresh mushrooms and a creamy, bacon-flavored tomato sauce that comes together in less than 30 minutes. I warmed up a nice loaf of bread, tossed together a simple salad and dinner was served. It was easy, less expensive and better for my family than eating out. It also completely satisfied my craving for a great pasta meal and made a tasty little lunch for me as leftovers the next day. Read More »

Creamy Turkey Lasagna with Spinach and Mushrooms

What’s one of the best parts about Thanksgiving dinner? You got it – the leftovers. Whole Wheat Fettuccine with Portobello Mushrooms, Caramelized Onions and Goat Cheese

I have a new favorite pasta dish – Whole Wheat Fettuccine with Portobello Mushrooms, Caramelized Onions and Goat Cheese. You could probably call the recipe Stinky Sneakers with Portobello Mushrooms, Caramelized Onions and Goat Cheese and it wouldn’t matter one bit to me – the combination of the latter three ingredients tastes that amazing. Of course, to help make this meatless meal more substantial and healthier, I opted to use Hodgson Mill Whole Wheat Fettuccine – rather than stinky sneakers.J The benefits you get from eating whole wheat are hard to pass up. Here’s one more to consider: there are a whopping 54 grams of protein in each box.  Read More »

Easy Homemade Polenta: A How-To

Polenta to the rescue! It’s simple to make, as long as you have some time to pay attention, but once you’ve got a batch, it makes a perfect base for many dishes and sauces — including my farmer’s market largesse. It’s also a tasty alternative to pasta, so I like to use it to shake up my routine. I especially love the contrast of the bright, smooth, melt-in-your-mouth polenta, a sprinkling of rich, nutty parmesan cheese and a twist of black pepper against fresh crisp vegetables and tangy tomato sauce. I’m also amazed that it’s only three ingredients — stone-ground Hodgson Mill Corn Meal, water, and salt — I thought there must be something more to it. I was wrong. Deliciously wrong. Read More »

This salad always gets rave reviews and the recipe is often requested. People just can’t believe something so simple could taste so delicious, but the proof is in this pasta salad.
