Zucchini-Chocolate Chip Muffins

Part of the reason I like to grow zucchini is to make this muffin recipe. The combination of Hodgson Mill Naturally White Flour, Hodgson Mill White Whole Wheat, shredded zucchini, mini chocolate chips and toasted walnuts makes for a perfect breakfast or snack muffin. Whole Wheat Couscous with Lemon, Peas and Chives

I think part of the reason this recipe went over so well is because I used Hodgson Mill Whole Wheat Couscous with Milled Flax Seed and Soy. The added flax and soy give the couscous a little more texture, not to mention the added health benefits. Foods that are mushy, like avocados, are not my husband’s favorites. Grilled Pizza with Caramelized Onions, Sausage and Cheese

Not only are these toppings completely delicious, but the crust is, too. Hodgson Mill Rye Flour as well as some Hodgson Mill Corn Meal is mixed into the dough to add extra flavor and crunch. Don’t worry if you’re not a big rye flour fan; it does a good job of highlighting the smoky flavor you get from cooking on the grill and isn’t noticeable otherwise. Dill Pickle Brioche Burger Buns

I got ambitious in the early-summer heat wave and made these lightly crusty, half-whole-wheat buns studded with chunks of dill pickle and onion, and covered with sesame seeds. I think you’ll find they have a knack for enveloping a burger (and all its trimmings) with tender loving care, and they’ll make you want to eat every last bite—even if there’s more bun than burger.
