My Irish Granny’s Whole Grain Wheaten Bread

Despite being named Erin, I don’t actually have an Irish granny. But if I did, I would hope she would bake bread like this–slightly sweet and nutty with toasted Hodgson Mill Steel Cut Oats, with a crisp browned crust hiding a tender buttery biscuit crumb. (For any word nerds out there, ‘Wheaten’ is an old English word that means just what it says, and it’s the name of this type of loaf.) To me, this fun clover-shaped loaf is whole grain baking at its best—taste, texture, and looks (a triple threat!). And since it’s a soda bread, made with buttermilk and baking soda instead of yeast, it’s ready in just about an hour. It’s perfect for breakfast, toasted, with butter and jam, but it easily holds up next to a savory soup or stew. The smell of this, fresh from the oven, drew everyone in my house straight to the kitchen. . . I just love when that happens. Read More »

Tangy Sour Cream & Onion Biscuits

My favorite potato chip flavor has always been sour cream & onion. I don’t eat them very often, but if there’s an open bag, they’re hard to resist. They’re tangy, and creamy, and crunchy . . . . These biscuits, however, are as perfect a stand-in for the decadent chips as I could dream up. I like that they remind me of junk food, even though the first ingredient in the base, Hodgson Mill Whole Wheat Insta-Bake, is Whole Wheat Flour. (So they’re a bit better for you than potato chips.) Read More »

Apricot-Hoisin Pork Chops with Hodgson Mill Whole Wheat Thin Spaghetti

Need a tasty dinner recipe that’s kid-approved, quick to fix and won’t leave your kitchen a mess? Of course you do! We all need a reliable recipe to pull out when an evening gets busy and everyone is hungry. Apricot-hoisin pork chops with Hodgson Mill Whole Wheat Thin Spaghetti is sure to please the pickiest eaters as well as the adults, and can be on the table in about 20 minutes. Also, by using Hodgson Mill Whole Wheat Thin Spaghetti, you get the added benefit of 100% whole wheat, which has more protein than traditional white pasta or other whole-grain blends. This is especially good for children who tend to eat more noodles than anything else on their plates. Read More »

Pomegranate-Spiced Couscous

This pomegranate-spiced couscous recipe is wonderful. It’s filled with tart pomegranate seeds, sweet golden raisins, warm spices, a sprinkling of cilantro and nutritious Hodgson Mill Whole Wheat Couscous. It’s bright, flavorful, good for you, and can be ready in five minutes. It pretty much checks off all the things I look for in a great recipe. I love to eat it for a light lunch or serve it as a side dish to go along with roasted chicken or pork tenderloin. Read More »

Brown Sugar Cinnamon Waffles with Blueberry-Maple Sauce

They are super tasty on their own with a little butter and maple syrup, but even better served with some blueberry maple sauce (see recipe below). I love that these waffles are filled with whole grains like oatmeal and Hodgson Mill White Whole Wheat Flour. Not only are my kids thrilled to have a delicious hot breakfast, but I can start their day off with good nutrition to boot. Let’s hear it for us Moms! Read More »

Chai Muesli and Chocolate Chip Cookies

Half spice cookie, half oatmeal cookie … half chocolate chip cookie. (Hmm… My math is a little fuzzy.) I just love the flavor combination here! The cookie love starts when you bite into the nice, browned edges, then through a soft and chunky strata of oats, sunflower seeds, apple bits and the occasional raisin (all from Hodgson Mill Apples & More Muesli), and every once in a while, a chocolate chip surprise. Then, just when you think you’ve tasted all this cookie has to offer, the chai spices come up from behind. You can feel—as much as taste—the warm, golden flavor the chai provides, rounding out all of the flavors. Like fine wine. But a cookie. Read More »

Oatmeal Turtle Jumbles

It is a good thing I can type with my mouth full, because I can’t stop eating these oatmeal turtle jumbles. They have a buttery, brown sugar-oatmeal-whole wheat bottom, a gooey chocolate layer mixed with pecans in the middle and then more buttery, brown sugar goodness mixed with caramels on top. Need I say more? You must try these. They are calling your name. And they’re a delicious addition to your holiday cookie tray, or an easy gift for a friend or neighbor. Plus, I’m sure Santa wouldn’t mind seeing these on the plate you leave out for him on Christmas Eve. Read More »

Chocolate Gingerbread Bars

We had company for dinner the other night and I ran out of time to fix dessert. People expect dessert when they come to my house. I take it as a compliment, but sometimes it can be a stretch to squeeze it into my meal plan with all of the things going on in my family, not to mention the hustle and bustle of the upcoming holidays. So I came up with these delicious Chocolate Gingerbread Bars that start with a box of Hodgson Mill Whole Wheat Gingerbread Mix. Read More »

White Whole Wheat Cinnamon Sugar Cookies

As the holidays get closer, it seems like my oven is on 24/7. My daughters and I spend a lot of time baking all kinds of good things for ourselves or to share with our family and friends. Walk in the front door and you’re bound to smell something amazing coming from the kitchen. One of our favorite things to make is cookies. We love them in all different shapes and sizes, soft or crispy, chewy or crunchy. Cookies are a good thing. Sometimes though, it feels like we’re on butter and sugar overload, so I like to make these cinnamon sugar cookies using Hodgson Mill White Whole Wheat flour to bring a little bit of whole grain nutrition into the mix. Good for you cookies are a great thing. Read More »

Homemade Graham Crackers

’ve always thought graham crackers were something you got out of a box. Period. Not that I thought they would be so difficult that they were beyond my skill level, or that they required some kind of strange ingredients, but I really just never thought about it. Let’s face it, they’re pretty readily available already made. And to be honest, I’ve always thought that they were more of a vehicle–a handy, edible way to get toasty, sticky marshmallows from a campfire fork to my mouth with a minimum of mess. Mmmm. S’mores. Read More »
