I have a new favorite pasta dish – Whole Wheat Fettuccine with Portobello Mushrooms, Caramelized Onions and Goat Cheese. You could probably call the recipe Stinky Sneakers with Portobello Mushrooms, Caramelized Onions and Goat Cheese and it wouldn’t matter one bit to me – the combination of the latter three ingredients tastes that amazing. Easy Homemade Polenta: A How-To

Polenta to the rescue! It’s simple to make, as long as you have some time to pay attention, but once you’ve got a batch, it makes a perfect base for many dishes and sauces — including my farmer’s market largesse. It’s also a tasty alternative to pasta, so I like to use it to shake up my routine. I especially love the contrast of the bright, smooth, melt-in-your-mouth polenta, a sprinkling of rich, nutty parmesan cheese and a twist of black pepper against fresh crisp vegetables and tangy tomato sauce. Summer Harvest Pasta with Mascarpone Meatballs

We’re settling into September, but that doesn’t mean garden fresh produce should be hard to find. Late summer is all about zucchini, peppers, tomatoes and eggplant – all of which are in this flavorful Summer Harvest Pasta with Mascarpone Meatballs. The array of fresh vegetables in this recipe is the first thing that caught my attention. I loved the idea of incorporating all of them into a delicious sauce to serve over Hodgson Mill Whole Wheat Bow Tie Pasta. The second thing that piqued my interest – and got my mouth watering – was the thought of making mascarpone meatballs. If you’re not familiar with mascarpone, it’s an Italian style cream cheese- not quite as tangy as American cream cheese – more velvety smooth and heavier on the cream side. It’s a bit of a gourmet ingredient and this was the first time I had seen it incorporated into something like a meatball. Grilled Pizza with Caramelized Onions, Sausage and Cheese

Not only are these toppings completely delicious, but the crust is, too. Hodgson Mill Rye Flour as well as some Hodgson Mill Corn Meal is mixed into the dough to add extra flavor and crunch. Don’t worry if you’re not a big rye flour fan; it does a good job of highlighting the smoky flavor you get from cooking on the grill and isn’t noticeable otherwise. Cooking pizza on the grill is not hard. Impressive – Yes. Hard – No. The key to success is to have everything prepared before you start grilling. This dish is easy and delicious – the perfect combination when it comes to dinner. Do yourself a favor and buy the EZ Peel shrimp (the kind that’s been cleaned and only need the shells slipped off) to make this meal even easier. I do enjoy a BLT on a hot day. Crisp, salty, tender, fresh, hot and cold all at once . . . it’s a surprisingly complex combo, when you think about it.
