I didn’t try German chocolate cake until I was in my teens. Isn't that crazy? As a kid, I thought of it as “grown up cake” (whatever that means) because of the Coconut-Pecan frosting. I can’t begin to tell you how much my children love these whoopie pies. The attraction began with the chocolate cookie layers (they are my kids after all) and the pink frosting and sprinkles sealed the deal. Several sticky mouthfuls later, and a new cookie relationship was born. I can’t say I blame my kids – I think these taste great, too. And the cute cookies have been a requested afternoon snack for the past few days. I’m pretty sure I heard a “whoopie” or two as they were being eaten. This is not exactly the post I had in mind for Valentine’s Day – honestly, I’m pretty much a chocolate-caramel-peanut butter-deep dark flavor kind of girl anytime, and especially on Box-of-Chocolates Day (As I believe it should be named). No, I had big dreams for something with dark baking chocolate, maybe some red wine, or some molasses and spice, something dark and rich and red like cherries or pomegranates . . . but after several tests, several sinkfuls of dishes, and several test versions of a baking disaster now referred to as “Stupid Cake” . . .
