It’s almost Christmas and I’ve still got a lot to do before I can say that I’m completely ready. I could use a few more hours in the day to get everything checked off my list. Wrapping presents, chasing my son, baking cookies, chasing my son, visiting with family, chasing my son some more… My days are filled to the brim from beginning to end. Not that I have to get everything done, but I like to make sure certain things are “just so” before I can throw in the towel and call it Christmas.
Mornings are the most relaxed time of my day. My son usually sleeps a little late, so I have time to drink a cup of tea, read the paper and make one of my favorite breakfasts –Blueberry Swirl Hodgson Mill Multi Grain Hot Cereal With Milled Flaxseed & Soy - before I get on with my holiday preparations. I love how this hot cereal is packed with protein and made with some of the best whole grains around; like flaxseed, oats, and cracked wheat. Getting a healthy start to my day is great, especially during this time of year when everything else I eat seems to involve butter and sugar. It also carries me through the morning and over the mid-morning hungry hump that usually has me seeking out some sort of snack around 10:30 a.m. That’s a big deal when your house is as filled with sweets as mine is right now.
Hodgson Mill Multi Grain Hot Cereal with Milled Flaxseed & Soy is even better when I turn it into Blueberry Swirl Multi Grain Hot Cereal with Milled Flaxseed & Soy. I think it takes longer to say the name than it takes to actually make. It’s so easy. It’s not even really a recipe-more like a nudge in the blueberry direction. But that’s what’s so perfect about this breakfast: easy, healthy, fast and delicious.
The way I make Blueberry Swirl Hodgson Mill Multi Grain Hot Cereal with Milled Flaxseed & Soy, is to measure 1 ⁄ 3cup cereal mix, 1 cup milk/water mix and about ½ cup frozen blueberries. The milk/water mix involves getting out a 1 cup measuring cup and filling it about 2/3full with milk and adding a splash or two of water to fill it to the top. The plus or minus milk/water ratio is no biggie. However fast the milk pours, just finish it up with some water. It’s not very scientific, but it works every time.
Next, put all three ingredients into a microwave-safe bowl that has sides about four inches up from where the milk/water reaches. As it cooks, the liquids will get bubbly and the cereal will rise and get bubbly, too. All of that bubbling can potentially lead to a boil-over mess in the microwave, so err on the side of caution and choose a bowl that has fairly high sides.
Microwave the mixture on high for about three minutes and 30 seconds. When it’s done, give it a stir. If it still looks noticeably thin, microwave it again for 45 more seconds. If it looks like it’s thickened a little, give it a stir and let it sit for a couple of minutes. While the cereal cooks, the blueberries thaw out, plump up and became little jam-like blueberry bites of goodness. I’ve used other frozen fruits in a pinch, but blueberries are my all-time favorite for this cereal.
By the time you get out the brown sugar and milk, the cereal will have thickened up quite a bit—close to the consistency of cooked oatmeal. Pour the hot cereal into a smaller bowl if you’d like, sprinkle with brown sugar to taste and drizzle with milk. Get ready to dig in. This cereal is meant to be eaten warm.
You can see all of the lovely blueberry swirls and plump blueberries under the brown sugar and milk. I’m so fond of this breakfast, I’ve been known to make it for dinner when it’s late and I need a bite to eat.
With all of the sweet treats that jump into my mouth over the holidays, starting the day with a bowl of Blueberry Swirl Hodgson Mill Multi Grain Hot Cereal with Milled Flaxseed & Soy makes me feel like I’m doing my body a healthy favor–and a delicious one at that. The end of my day is another story, so getting a leg up with breakfast is certainly helpful. Wishing all of you a very Merry Christmas and Happy New Year! Enjoy!

Combine dry cereal, milk/water mix and blueberries in a deep, microwave-safe bowl. Microwave on high power for about three minutes and 30 seconds. Stir. If mixture is still thin, microwave for an additional 45 seconds. The cooked cereal should initially be somewhat thick and will continue to thicken up to near-oatmeal consistency as it cools slightly. Pour into a smaller bowl if you’d like, sprinkle with brown sugar to taste and drizzle with milk. Eat immediately.
