Chicken Caesar Pasta Salad

Lunch has never been a big deal for me. Make a sandwich or heat up some leftovers and I’m satisfied. I’m much more of a breakfast and dinner cook – lunch is my time to relax. Sometimes though, lunch has to step up and become a bit fancier – like when you’re invited to a picnic or are entertaining house guests. When that’s the case, this Chicken Caesar Pasta Salad is the first thing I think of. It does take some time to chop the fresh herbs and vegetables, but you can use a store-bought rotisserie chicken and cooked Hodgson Mill Whole Wheat Bow Tie Pasta. Toss all the ingredients with some bottled Caesar dressing and lunch has suddenly become much more than just a sandwich.

This salad always gets rave reviews and the recipe is often requested. People just can’t believe something so simple could taste so delicious, but the proof is in this pasta salad. This recipe makes a lot, so get out your biggest bowl to do your tossing in — otherwise you’ll end up with bits and pieces of salad all over the place. Also, even if you’re on the fence about whole-wheat pasta, give Hodgson Mill Whole Wheat Bow Tie Pasta a chance in this recipe. The noodles do a superior job holding up to the vegetables and add a nice flavor dimension that doesn’t scream “whole wheat.” Plus you will be getting all of the health benefits of whole wheat. Chicken Caesar Pasta Salad


  •  3 cups shredded, roasted chicken
  • 3 cups cooked Hodgson Mill Whole Wheat Bow Tie Pasta
  • 2 cups thinly sliced romaine lettuce
  • 2 cups halved grape tomatoes
  • ½ cup thinly sliced fresh basil
  • ½ cup chopped green onions
  • ⅓ cup Caesar dressing
  • ¼ cup chopped fresh parsley
  • 1 cup crumbled feta cheese
  • 1 minced garlic clove


Put all ingredients in a large bowl and toss well to combine. Serve room temperature or chilled.

We finally made/ate this the other night. It's very versatile. We didn't have local, fresh tomatoes yet so we left those out. We omitted or used different herbs. Some of us prefer Ranch dressing over Caesar. We used shells instead of bow ties. Basically, it was ooh la la delicious! Thanks for the inspiration!
