Lunch has never been a big deal for me. Make a sandwich or heat up some leftovers and I’m satisfied. I’m much more of a breakfast and dinner cook – lunch is my time to relax. Caesar Chicken Pasta Salad
Adapted from Cooking Light
- 3 cups shredded, roasted chicken
- 3 cups cooked Hodgson Mill Whole Wheat Bow Tie Pasta
- 2 cups thinly sliced romaine lettuce
- 2 cups halved grape tomatoes
- ½ cup thinly sliced fresh basil
- ½ cup chopped green onions
- ⅓ cup Caesar dressing
- ¼ cup chopped fresh parsley
- 1 cup crumbled feta cheese
- 1 minced garlic clove
Put all ingredients in a large bowl and toss well to combine. Serve room temperature or chilled.
