Multi Grain Cereal with Dates, Orange and Cinnamon

1

There are a lot of things I like about Hodgson Mill’s Multi Grain Hot Cereal.  First of all, it’s quick to fix – something a mother of four definitely appreciates.  Second, it’s filled with oats and three types of whole wheat, so I know it’s a healthy way to start the day.  And third, it tastes great plain with just a little brown sugar, but can easily be adapted to other flavor combinations.

The Blueberry Swirl Hot Cereal recipe is still one of my favorite ways to fix Hodgson Mill Multi Grain Hot Cereal, but recently, I’ve also become fond of mixing it with Medjool dates, fresh orange and cinnamon.  If you’re not familiar with Medjool dates, they’re generally found in the produce section of the supermarket and are usually packaged in small plastic containers or displayed loosely in large bins and priced by the pound.  They’re also left whole, versus chopped, and most often need to have the pits removed, although that’s a very simple task.   Medjool dates are moist, naturally sweet, a good source of fiber and can often be substituted for raisins as an easy snack or ingredient.

In this Multi Grain Cereal with Dates, Orange and Cinnamon recipe, Medjool dates are stirred into the hot cereal as it cooks, slowly dissolving into the grains and thereby, along with a bit of honey, adding sweetness to the recipe.  Once the cereal has finished cooking (in about 3 minutes), some orange zest and juice and a dash of cinnamon are swirled into the pot to make things even more flavorful.  A drizzle of honey, along with a few diced dates and a sprinkling of sliced almonds goes on top right before serving, making for a very fast, healthy and delicious breakfast that, thanks to all the healthy grains, will easily hold you until lunch.  That’s great for kids at school as well as adults who would rather not have to head to the snack machine hours before lunch.

This is what you need to get a great hot breakfast cooking: Hodgson Mill Multi Grain Hot Cereal, Medjool dates, honey, an orange, sliced almonds and a little bit of cinnamon.

3

Begin by slicing five dates and removing and discarding the pits.  Then dice the dates into chunks.  Set aside.

4

In a medium-sized saucepan, combine the milk, water, Hodgson Mill Multi Grain Hot Cereal, honey, dates and salt.  Bring the mixture to a boil over high heat and then reduce the heat to medium-low and cook for 2-3 minutes or until the liquid has been absorbed and the cereal has thickened.  The dates will sink as the mixture cooks, so it’s important to keep stirring the cereal or they could scorch on the bottom.  Stirring also helps the dates blend into the grains and gives the cereal a creamy texture.

Did you catch the 2-3 minutes part of the cooking time?  Yep it’s that quick.  You can speed things along even further by pitting and chopping the dates the night before and keeping them in an airtight container.

When the cereal has thickened, remove the pan from the heat and add the orange zest, the juice of that orange (no sense in wasting it) and the cinnamon.  Stir everything together and portion out what you want to eat into bowls.  Whatever you don’t eat can be kept in an airtight container in the refrigerator for 2-3 days and reheated as needed.  You’ll get 4-5 adult-sized servings from this recipe.

Pit and chop a few more dates (about one date per serving) and set aside.

Right before serving, top each bowl of hot cereal with a drizzle of honey, a sprinkling of sliced almonds and a few diced dates.  Yum!
