Whole Wheat Bow Tie Pasta with Tomatoes, Oregano, Basil and Feta Cheese Sauce

It’s 5 o’clock and my family wants to know what’s for dinner.  Most of the time I have a plan in mind, but there are nights when I have no idea what to fix.  That’s when recipes like this Whole Wheat Bow Tie Pasta with Tomatoes, Oregano, Basil and Feta Cheese Sauce come in handy.  With a few kitchen staples like Hodgson Mill Whole Wheat Bow Tie pasta, canned tomatoes, dried herbs and feta cheese, dinner is easy to put together, healthy, and ready in no time.

I buy several boxes of Hodgson Mill Whole Wheat pasta at a time so that I’m sure to have a box in my pantry whenever I need it.   My family is partial to Hodgson Mill Whole Wheat Bow Tie pasta (my kids refer to it as butterfly noodles), so that’s what I use in this dish, but other types of Hodgson Mill pasta, like whole wheat penne or elbows, will work just as well.  If you happen to have gluten free needs, Hodgson Mill gluten free pastas will also work well in this dish.

Begin by boiling a large pot of salted water and cooking the Hodgson Mill Whole Wheat Bow Tie pasta for 7 minutes.  The noodles will be slightly undercooked, which will help keep them from becoming mushy as they bake in the cheese sauce later on.  Drain and set aside.

In a small bowl, combine the tomatoes, oregano and basil.  Set aside.

 Next, melt the butter in a medium-sized sauce pan and then add the garlic, cooking until fragrant, about 1 minute. 

 Add the Hodgson Mill Naturally White Flour and cook for another minute or two, stirring constantly.  Slowly add the milk to the mixture, whisking the whole time, and bring to a boil.  Reduce the heat and simmer for about three minutes or until the sauce thickens, stirring or whisking constantly.

 Remove the pan from the heat and stir in half of the feta cheese.


Then stir in the tomato mixture. 


 Next, fold in the Hodgson Mill Whole Wheat Bow Tie pasta until well combined. 


Pour the pasta mixture into an 8- or 9-inch baking dish that’s been sprayed with non-stick cooking spray and sprinkle the remaining feta cheese on top.  Bake uncovered in a 400° F oven for 20-25 minutes or until the sauce is bubbly and the cheese begins to brown.  Serve immediately.


This Whole Wheat Bow Tie Pasta with Tomatoes, Oregano, Basil and Feta Cheese Sauce is an easy, quick-to-fix dinner that lends itself well to using whatever ingredients you have on hand.  The bow tie pasta is interchangeable with other Hodgson Mill whole wheat or gluten free pastas and a jar of roasted red peppers or other roasted vegetables can easily be substituted for the canned tomatoes.  You might try switching the cheese to Monterey Jack or cheddar and using other herbs to change the flavor.   To stretch this meal a little further, add some cooked chicken or browned ground beef; either would work well in this dish and provide extra protein.
