Gluten Free Brown Butter Oatmeal Scotchies

Sometimes you just need a cookie. Not any old cookie, a really good one; crispy on the outside, tender in the middle and loaded with goodies. Gluten Free Brown Butter Oatmeal Scotchies are all that and gluten free, thanks to Hodgson Mill Gluten Free Multi Purpose Baking Mix. Filled with Hodgson Mill Gluten Free Thick Cut Rolled Oats , crunchy pecans, and butterscotch morsels, these brown butter delights will undoubtedly satisfy your cookie craving.

Hodgson Mill Gluten Free Multi Purpose Baking Mix is a combination of three whole grain, gluten free flour (millet, sorghum and brown rice) and includes xanthan gum (a binding agent), so there’s no need to buy an extra ingredient to get started baking.  This mix is perfect for making everything from waffles to brownies, cakes and, of course, cookies.   Hodgson Mill Gluten Free Thick Cut Rolled Oats are also certified gluten free and add a heart healthy dose of whole grains, fiber, and nutrients, like iron, thiamin, and magnesium, to these cookies.  I love that by using Hodgson Mill products, I can still reap the benefits of whole grains even in gluten free cooking. 

To get started, brown ½ cup butter in a small saucepan and then immediately pour into a bowl to cool.  Place the bowl in the refrigerator for about 30 minutes or until the butter has re-solidified.  Or if you’re like me and want your cookies ASAP, put the butter in the freezer for 15 minutes to speed things along. This step can be done a day in advance.   

While the butter is cooling, melt the remaining tablespoon of butter in a large skillet and sauté the oats until lightly toasted.  This step is optional, but recommended.  Toasting the oats enhances the oat flavor, giving them a nuttier taste, something I like when oats are a main ingredient. You could even add the pecans to the skillet and toast them, too. 

Transfer the oats to a paper towel-lined plate to cool.  Set aside. 

In a large bowl, mix the browned butter and sugar together until light and fluffy.  Add the egg and vanilla and mix until well combined. 

Next, add the baking mix, baking soda, cinnamon and salt to the bowl.  Mix on low speed until just combined. 

Stir in the toasted oats, chopped pecans and butterscotch chips.  Scoop the dough by rounded tablespoons and drop onto lined baking sheets about two inches apart.  Bake in a 350°F oven for 9 to 10 minutes or until golden brown, but not completely set in the middle.  Allow the cookies to cool on the baking sheets for 5 minutes and then transfer to a wire rack to cool completely.
