Chai Buckwheat Groats Hot Cereal

Breakfast is one of my favorite meals, and in the wintertime, I like it hot.  Maple & Brown Sugar Multi Grain Hot Cereal, Banana-Nut Bulgur Wheat Hot Cereal with Cinnamon-Honey Yogurt, Peaches & Cream Crock Pot Steel Cut Oats, and Cranberry Orange Baked Oatmeal are some of my favorites, and now Chai Buckwheat Groats Hot Cereal has joined the bunch.  Lightly sweet and loaded with spice, Chai Buckwheat Groats is hearty, healthy and a cinch to put together.  It also reheats well, so leftovers guarantee a nutritious and delicious breakfast for mornings to come.

Tiny nutrition powerhouses, buckwheat groats are packed with protein, minerals, fiber and a whole host of other health benefits.  They’re also gluten-free, making them a great alternative grain for people with gluten sensitivity.  

To bring out their natural nutty flavor, toast the groats in a little butter before adding the liquids.  It’s a worthwhile step with delicious results.

Make the most important meal of the day a great-tasting, good for you bowl of Chai Buckwheat Groats Hot Cereal. Topped with a pat of butter, a bit of brown sugar and a splash of creamy coconut milk, it’s an easy way to start the day with a healthy hot breakfast.  Enjoy! 

Ingredients

  • 1 tsp. unsalted butter
  • 1 package Hodgson Mill Buckwheat Groats
  • 1 cup canned coconut milk
  • 1 1/4 cup water
  • 1/2 tsp. ground cinnamon
  • 1/8 tsp. ground cardamom
  • 1/8 tsp. ground ginger
  • Pinch of ground nutmeg
  • Pinch of salt
  • 1/2 tsp. vanilla extract
  • butter , brown sugar and additional coconut milk for topping

Instructions

In a medium saucepot, melt the butter over medium-high heat.  Add the groats and toast for about 2 minutes or until lightly browned. Pour in the coconut milk and water and add the spices.  Bring to a boil, reduce the heat, cover and simmer for 18 to 20 minutes or until most all of the liquid is absorbed. Scoop cereal into individual bowls and top with a pat of butter, brown sugar and additional coconut milk as desired. Leftovers can be kept in an airtight container in the refrigerator for up to 5 days.

That just seems like a really good combination, unusual however very healthy.
