Banana Walnut Multi Grain Breakfast Bars

During the week, having breakfast on the run is typical for my high school daughter.  With such an early start time, the minutes she means to set aside for breakfast often lose out to the snooze button.  So, to make sure she has something healthy in her hand as she dashes out the door, I came up with an easy, nutritious breakfast bar.  Banana Walnut Multi Grain Breakfast Bars are a cinch to put together and are chock-full of healthy whole grains thanks to Hodgson Mill Multi Grain Hot Cereal with Quinoa & Flax.   

Hodgson Mill Multi Grain Hot Cereal with Quinoa & Flax is one of my go-to hot breakfasts (see Maple & Brown Sugar Multi Grain Hot Cereal) and it works perfectly as the basis for these bars.  The combination of six nutritious grains in one convenient mix makes putting together a heart healthy hot breakfast or baked good a cinch.

With a handful of pantry staples and Hodgson Mill Multi Grain Hot Cereal with Quinoa & Flax, you can have a pan of Banana Walnut Multi Grain Breakfast Bars ready in no-time.  It’s easier to cut the bars once cooled, but be sure to sneak a warm piece.  The melty chocolate chips get me every time.

Instructions

In a large bowl, whisk together the banana, sugar, honey, oil, vanilla, and egg.  Add the flour, salt, cereal, chocolate chips, and walnuts.  Stir until well combined.  Pour the batter into a lined, 8-or 9-inch baking pan coated with non-stick cooking spray.  Bake at 350°F for 20 to 25 minutes or until a toothpick inserted into the center comes out clean.  Cool completely and then transfer to a cutting board to cut into bars.  Store bars in an airtight container at room temperature for up to four days. 

Serves 8
