When the Midwest summer heat hits, I like to imagine I am really in Key West enjoying the ocean breeze and this Key Lime Overnight Oats recipe is just the ticket! Sweet and tangy, this breakfast almost tastes more like a dessert than a nutritionally packed bowl of oatmeal.

My two little ones are in the thick of the fiercely independent ages of 5 and 2 and this was a hit with them and besides the zesting of a lime, this recipe could be done entirely on their own. This was a fun way for them to learn about measuring, fine motor skills, and patience.
We can’t all be lucky enough to be beachside for breakfast, but you can have a delicious breakfast that will keep you full all morning. Skip your usual boring breakfast and whip up some Key Lime Overnight Oats! A delightful start to your day!
- 1/2 cup Hodgson Mill Gluten Free Quick Rolled Oats
- 1/2 cup milk
- 1/2 cup plain yogurt
- fresh squeezed key lime juice from 2 key limes
- 1-2 Tbsp. coconut flakes
- 1 Tbsp. honey plus 1 Tbsp. for topping
- 1 Tbsp. key lime zest plus 1 Tbsp. for topping
- 1 graham cracker, crushed
- pinch of salt (optional)
Combine Hodgson Mill Gluten Free Quick Rolled Oats, milk, plain yogurt, fresh squeezed key lime juice, coconut flakes, honey, and key lime zest in a jar. Mix well and refrigerate at least one hour, but preferably overnight. Top with honey, crushed graham cracker, and key lime zest.
Note: Some may prefer to add a pinch of salt. Gluten free graham crackers may be used to make this recipe 100% gluten free.
