Baked Greek Ultragrain® Spaghetti

Comfort food comes in the form of casseroles for my family during the cold winter months and Baked Greek Ultragrain® Spaghetti is one of our favorites. Each forkful of healthy, whole grain Hodgson Mill Ultragrain Spaghetti with Quinoa layered with tomatoes, onion, garlic, lean ground beef and feta cheese takes the chill from our bones and satisfies our desire for a warm, delicious meal.  Read More »

Gluten Free Cannoli Bites

Our extended family is blessed to include some wonderful Italians (the rest of us are all good German stock, so we appreciate the variety), and one of our Christmas traditions is to have a big spaghetti dinner together on Christmas day. A huge pot of spaghetti, another of homemade tomato sauce (my uncle always made it from his garden tomatoes), salad galore, and then peppermint ice cream, coffee, cookies, and crispy, creamy cannoli for dessert – yum! Is it any wonder I associate cannoli with Christmas? Read More »

Minestrone with Gluten Free Elbows and Bacon

Minestrone means “big soup” in Italian and after a bowl of Minestrone with Gluten Free Elbows and Bacon, you’ll know why. Made with onion, garlic, corn, zucchini, tomatoes, beans, Hodgson Mill Gluten Free Brown Rice Elbows with Golden Milled Flax Seed and fresh basil, this soup is big, flavorful and filling. Add a sprinkle of Parmesan cheese and smoky bacon on top and minestrone will likely take on the meaning, “my favorite soup,” before you reach the bottom of the bowl.  Read More »

Quinoa & Brown Rice Caprese Salad + Giveaway

Quinoa & Brown Rice Caprese Salad is hands down my favorite salad of the summer. I love the combination of sun-ripened tomatoes, creamy mozzarella and sweet basil tossed together with Hodgson Mill Italian Quinoa & Brown Rice and a drizzle of balsamic vinaigrette. I’ve eaten this flavor-packed salad every day for the past week and can’t get enough. It’s so good!  Read More »

Ultragrain Penne with Fresh Tomatoes, Mozzarella and Pepperoni

Are time consuming summer activities making it hard to get a home-cooked meal on the table? No need to worry, Ultragrain Penne with Fresh Tomatoes, Mozzarella and Pepperoni can be put together in a snap, tastes delicious, and is a great way to get a serving of healthy whole grains onto your plate. My kids refer to this dish as Pizza Pasta (from all of the pizza-like ingredients) and I’m beginning to think that they’re purposely keeping us late at the pool just so we can have it for dinner again. Read More »

Italian Ultragrain® Spaghetti Frittata

Breakfast for dinner is always a popular choice with my family, but sometimes I’m hungry for a meal that’s more substantial and nutritious than the usual pancakes or waffles we fix. On occasions like this, I turn towards frittatas; they include eggs (which make them breakfast-like) and other savory ingredients such as cheese, vegetables and sometimes meat.  Read More »

Spring Woods Pasta

I was inspired to make this dish when I was walking through woods a few weeks ago, in early spring. When I got back to my kitchen, first I took off my muddy shoes, and then I got to work figuring out how to capture the smell of things growing, or getting ready to-- that amazing combo of earthy and fresh, like a garden that’s just been planted. Earthy flavors like sausage, mushrooms, and garlic balance with bright new spring tastes like asparagus, peas, fresh herbs and lemon zest.  Read More »

Ultragrain® Chicken Carbonara - #Giveaway

Including whole grains in our meals is important to me; the health benefits, like lowering the risk of heart disease, cancer and diabetes, make it worth the effort. That being said, sometimes whole wheat pasta is a hard sell in my house. We have plenty of whole wheat pasta favorites (you can find them on our blog), but trying to compete with traditional white flour pasta can be challenging – until now. Hodgson Mill has developed a new line of pasta that’s made with Ultragrain®, a 100% whole wheat flour that offers whole grain nutrition with the taste, texture, and appearance of traditional white flour.  Read More »

Gluten Free Penne with Pancetta and Asparagus in Vodka Sauce

You can tell spring is on the way when bright green asparagus starts appearing in the produce section of the grocery store. Asparagus is generally available year round, but spring asparagus is crisper, grown stateside and is more of a spring green than the wintertime variety. Some of my favorite spring pasta dishes use asparagus . . .  Read More »

Gluten Free Beef, Basil & Goat Cheese Lasagna Roll-Ups

When the weather is cold, baked pasta tops my list of comfort foods. Nothing warms you up on a chilly night like a big helping of piping hot pasta baked in a delicious tomato sauce and covered with melted cheese. With that in mind (and below freezing temperatures), I decided to fix Gluten Free Beef, Basil & Goat Cheese Lasagna Roll-Ups for dinner. This dish has everything I was looking for; noodles wrapped in a savory beef, basil and goat cheese filling that are topped with a flavorful tomato sauce and covered in gooey mozzarella cheese.  Read More »
