Cookies are a great idea any time of year, but these Whole Wheat Apple Butterscotch Oat Cookies are the perfect way to kick off fall baking. Yes – fall baking. That slight nip in the morning air means that the seasons are changing and fall is knocking at the door. As much as I love summer, there’s a lot to love about fall - cozy sweaters, campfires, football, comfort food and apples – lots and lots of apples.  Read More »

Peaches & Cream Crock Pot Steel Cut Oats

September is here and apples are starting to flood the market, but be sure to take notice of the late season peach crop; these golden beauties have been ripening in the sun all summer long and are the sweetest variety in the bunch. I absolutely adore peaches and tend to buy them in bulk to make all kinds of wonderful things . . .  Read More »

As August comes to a close, I find myself wanting to cook with as many fresh summer ingredients as possible; knowing all too well that they’ll be gone soon. There’s a part of me that can’t wait for cooler weather to arrive, making way for bubbly baked casseroles, steaming bowls of soup and slow-cooked meals – but not yet. Right now, I still want to revel in summer’s bounty of homegrown produce and enjoy delicious dishes like Ultragrain® Penne with Fresh Corn, Zucchini and Herbs.  Read More »

BBQ BLT Pizza

July has certainly cranked up the heat, which makes it less than appealing to create oven-like temperatures in my kitchen for our weekly dinner tradition, pizza Friday. If you’ve ever made pizza at home, you know that the oven has to be set well into the upper 400°’s to achieve a crispy crust. I don’t mind this high temperature warming up our kitchen in the middle of winter, but not so much during the hottest days of summer. So, to keep the heat outdoors, we use our BBQ grill to cook pizza.  Read More »

Double Chocolate Whole Wheat Zucchini Brownies

Every spring when I’m planting my vegetable garden, I prepare four mounds of dirt and put five zucchini seeds in each one. Most of the time, about half of the seeds germinate, a few seedlings get eaten by bugs and one or two die for some reason or another, leaving me with around six plants – still a lot of zucchini. It just so happens that this summer ALL of the seeds grew into huge, prolific plants that are producing enough zucchini to feed a small army. Read More »

Ultragrain Penne with Fresh Tomatoes, Mozzarella and Pepperoni

Are time consuming summer activities making it hard to get a home-cooked meal on the table? No need to worry, Ultragrain Penne with Fresh Tomatoes, Mozzarella and Pepperoni can be put together in a snap, tastes delicious, and is a great way to get a serving of healthy whole grains onto your plate. My kids refer to this dish as Pizza Pasta (from all of the pizza-like ingredients) and I’m beginning to think that they’re purposely keeping us late at the pool just so we can have it for dinner again. Read More »

Cherry-Lime Coconut Flour Muffins

Often times, after we’ve spent the day at the swimming pool, my kids ask to stop by Sonic to complete our attempt at cooling down from the hot summer weather. Slushies are on their minds, so with my arm fully twisted, we buzz through the drive-through on our way home. My kids have their favorites; anything blue for my son, cherry, grape and strawberry for the girls. For me, I always order the cherry limeade; Read More »

Fresh Blueberry-Oat Bars

Freshly picked blueberries are my husband’s favorite summertime fruit. Each time we go to our local blueberry patch, we make sure to pick an extra pailful of blueberries, so he has plenty to snack on. Because these berries are so prized, whatever I make with them needs to be top-notch.  Read More »
