Apple-Carrot Muffins

Ingredients

  • 1 pkg Hodgson Mill Whole Wheat Muffin Mix
  • 1 Tbsp vegetable oil
  • 2/3 cup milk
  • 1 egg
  • 1/2 cup carrots, peeled & shredded
  • 1/2 cup apple, peeled & chopped
  • 1/2 tsp cinnamon
  • 1/4 cup chopped nuts, optional

Directions

Preheat oven to 400° F. Line 7-8 muffin cups with paper liners or grease muffin cups. Place contents of this package into a mixing bowl, cut in low fat butter or vegetable oil. Add remaining ingredients and mix until just blended. Spoon batter into prepared muffin cups. Bake at 400° F for 18 -20 minutes. Yield: 7 -8 muffins
