Herb Tomato Soup with Pasta


  • 5 cups vegetable broth
  • 1 large potato, peeled and diced
  • 1/2 cup green onion, chopped
  • 1/2 cup parsley, fresh, chopped
  • 4 large garlic cloves, chopped
  • 1 tsp thyme, dried
  • 1 tsp sage, dried
  • 2 cups vegetable juice, spicy
  • 1 cup Hodgson Mill Whole Wheat Bow Ties


Combine vegetable broth, diced potato, green onions, parsley, garlic, thyme and sage in large Dutch oven.  Simmer over medium heat until tender, about 15 minutes.  Add spicy vegetable juice and pasta; simmer until pasta is tender, stirring occasionally, about 8 minutes.  Season to taste with salt and pepper.  Garnish with cheese and croutons if desired. Serves 6
