In saucepan, combine sugar, cornstarch, and salt; gradually stir in milk. Cook and stir over medium heat until bubbly. Cook and stir 2 minutes. Remove from heat.
Stir small amount of hot mixture into yolks; immediately return to hot mixture; cook 2 minutes longer stirring constantly. Remove from heat. Add butter and vanilla.
Prepare Vanilla pudding, increasing sugar to 1 cup. Chop two 1-ounce squares unsweetened chocolate; add with milk.
Slice 3 bananas into vanilla pudding and mix well.
Substitute brown sugar for granulated sugar in Vanilla pudding recipe. Increase butter to 3 tablespoons.
COCONUT CREAM PUDDING
Add 1 cup flaked coconut to Vanilla pudding recipe.
The above recipes may also be used for pie filling to be topped with whipped cream or Meringue.
