Gluten Free Pie Shell



Preheat oven to 450 deg. F. Blend baking mix and salt together; cut in shortening until crumbly.  Add water mixing with a fork until dough is moistened.  Using your hands, form dough into a ball and lightly dust with baking mix.  Place dough between two sheets of waxed paper and roll out thin about 2 inches larger than pie plate.  Carefully remove the top sheet of waxed paper.  Place dough in pie plate and remove the other sheet of waxed paper.  Flute edges of the dough if desired and prick dough numerous times with a fork (if making pudding type pie).  Bake until light brown, about 8-10 minutes. Cool on wire rack. Yield: 1 pie shell
