Hot Chocolate Coconut Flour Mug Cake

Sometimes a little cake is just what you need on a cold winter’s night, so break out a mug or two and get baking.

Ingredients

  • 2 Tbsp. Hodgson Mill Gluten Free Coconut Flour
  • 2 Tbsp. gluten free hot chocolate mix, (I used Swiss Miss)
  • 1/4 tsp. baking powder
  • 1/4 cup milk
  • 1 large egg
  • 1/4 tsp. vanilla extract
  • 2 Tbsp. miniature semisweet chocolate chips, plus extra for sprinkling
  • miniature marshmallows, for topping

Directions

In a microwave safe mug, mix flour, hot chocolate mix, and baking powder. Add egg, milk, and vanilla and stir until well combined.  Stir in chocolate chips and microwave on high for two minutes.  Top with marshmallows and additional chocolate chips if desired.  Serve warm, immediately.
