- 1/4 cup Hodgson Mill Milled Flax Seed, or Hodgson Mill Flax Chia Blend
- 1/2 tsp. baking powder
- 1 tsp. cinnamon
- Pinch of nutmeg
- 1 large egg
- 1 Tbsp. molasses
- 1 tsp. oil
- 1/2 tsp. vanilla extract
- 1-2 Tbsp. mini choclate chips, berries or chopped fruit (optional)
Mix all ingredients well in a mug. Microwave 1 minute on high. Enjoy warm! Spread with butter, jelly, or nut butter if desired.
Note: Hodgson Mill Milled Flax Seed, Organic Milled Flax Seed, and Flax Chia Blend have all been used to test this recipe, and they can be used interchangeably. If made with Flax Chia Blend, you may notice small white specks in the muffin that are slightly crunchy – those are the chia seeds.
All microwaves are slightly different; yours may take 10-15 seconds less or more for a perfect muffin.
This recipe also works great in the oven! Preheat your oven to 350 degrees and bake for 15 minutes in an oven-safe mug or ramekin (until a knife comes out clean in the middle).
