- 1/2 cup Hodgson Mill Gluten Free Quick Rolled Oats
- 1/2 cup milk
- 1/2 cup plain yogurt
- fresh squeezed key lime juice, from 2 key limes
- 1-2 Tbsp. coconut flakes
- 1 Tbsp. honey, plus 1 Tbsp. for topping
- 1 Tbsp. key lime zest, plus 1 Tbsp. for topping
- 1 graham cracker, crushed
- pinch of salt, (optional)
Combine Hodgson Mill Gluten Free Quick Rolled Oats, milk, plain yogurt, fresh squeezed key lime juice, coconut flakes, honey, and key lime zest in a jar. Mix well and refrigerate at least one hour, but preferably overnight. Top with honey, crushed graham cracker, and key lime zest.
Note: Some may prefer to add a pinch of salt. Gluten free graham crackers may be used to make this recipe 100% gluten free.
