Quick and Easy Vegetable Pasta Salad

This versatile dish could be a great light main dish meal, or fantastic fare at a pot luck or picnic.

Ingredients

  • 2-1/2 cups Hodgson Mill Gluten Free Brown Rice Penne, 1/2 of pkg.
  • 1 cup Parmesan cheese, freshly grated
  • 3/4 cup Black Olives, sliced
  • 1/4 cup red onion, sliced
  • 1/4 cup red pepper, chopped
  • 6-8 oz. Italian dressing
  • broccoli florets, fresh
  • cauliflower florets, fresh
  • cooked chicken, cubed
  • ham, cooked and cubed

Directions

Cook penne 5-7 minutes or until tender (do not overcook).  Drain, rinse under cool water and drain again.  In a small bowl, combine Parmesan cheese, black olives, red onion and red pepper.  Toss mixture with cooked, cooled penne and any desired optional ingredients such as broccoli, chicken cubes, etc.
