- 2-1/2 cups Hodgson Mill Gluten Free Brown Rice Penne, 1/2 of pkg.
- 1 cup Parmesan cheese, freshly grated
- 3/4 cup Black Olives, sliced
- 1/4 cup red onion, sliced
- 1/4 cup red pepper, chopped
- 6-8 oz. Italian dressing
- broccoli florets, fresh
- cauliflower florets, fresh
- cooked chicken, cubed
- ham, cooked and cubed
penne 5-7 minutes or until tender (do not overcook). Drain, rinse under cool water and drain
again. In a small bowl, combine Parmesan
cheese, black olives, red onion and red pepper.
Toss mixture with cooked, cooled penne and any desired optional
ingredients such as broccoli, chicken cubes, etc.
