- 1 8oz. pkg. Hodgson Mill Gluten Free Brown Rice Penne
- 2 small bell pepper, use different colored peppers for a colorful dish
- 1 cup cherry tomatoes, cut in half
- 1/2 cucumber, without seeds
- 1/2 red onion, thinly sliced
- 1 cup feta cheese, crumbled
- 1 cup Black Olives, pitted & cut in half
- 1/4 cup fresh mint leaves, finely chopped
- dressing ingredients
- 1/3 cup extra virgin olive oil
- 3 Tbsp. fresh lemon juice
- 1 tsp. dried oregano
- salt and pepper to taste
Cook pasta according to instructions on box. Make sure pasta is tender but firm. Set aside in bowl.
In a small bowl, whisk dressing ingredients until thickened. Salt to taste.
In a large bowl, combine salad ingredients with 2 Tbsp. of dressing. Combine pasta with 2 Tbsp. of dressing. Add salad ingredients and adjust seasonings and refresh with lemon juice if needed.
