Preheat oven to 400ºF. Prepare 12 muffin cups with paper liners or oil.
In a large bowl, blend together dry ingredients. Add eggs, chilled applesauce and vegetable oil. Mix until well-blended. Spoon batter into muffin cups. Let stand 10 minutes to allow oat bran to soften and muffins to rise.
Bake 15 minutes or until golden brown. Let cool slightly
Note: You can make these muffins lower fat by using flax eggs instead of whole eggs: to substitute one egg, mix 1 Tbsp. milled flax seed and 3 Tbsp. warm water, and let stand until thick.
You may choose to reduce the amount of sugar to 1/3 or 1/4 cup; or you may use another sweetener of choice, such as stevia or monkfruit, to replace some or all of the sugar. Try with 1/4 cup brown sugar, 1/4 tsp. stevia, and add 1/4 cup extra applesauce.
