Fiber Rich Wheat Germ Muffins

Add a cup of fresh coffee to go with this hearty muffin. Perfect start to a productive day.



Preheat oven to 400º F. Line muffin cups with paper liners or grease muffin cups.

In a large bowl, beat egg well, mix in milk. Add wheat germ. Let stand 1 minute until some moisture is absorbed. 

Sift in rest of dry ingredients. Add oil, stir until just combined. Fill muffin cups about half full. Bake 15 minutes.
