Lightly spray a large bowl with nonstick cooking
spray to prepare to raise the dough.
Dissolve yeast in warm water. Allow to proof for 5 minutes. Stir in sugar, salt, olive oil, flour and 1
cup of organic oat bran flour. Knead in
remaining organic oat bran flour by hand, with food processor or electric
mixer. This will take about 5 minutes;
dough will be smooth and satiny.
Place pizza dough in the prepared bowl and allow to rise in a warm place
for 15 minutes. Preheat oven to
400°F. Spray one 14-inch pizza pan or
two 9-inch pizza pans with nonstick cooking spray. Stretch pizza crust to fit pan; flute outer
edges of pizza dough to hold fillings.
Top with your favorite toppings
