Apple Oatmeal Muffin

One of our favorites during apple season. Nothing says Good Morning! on a crisp fall day like one of these muffins and steam mug of coffee.

Preheat oven to 400°F. Spray a 12 cup muffin tin with nonstick spray or place liners in muffin cups.

Combine oats, grated apple, maple syrup, yogurt, egg and oil in a large bowl. 

In a separate bowl, blend flour, baking powder, baking soda, cinnamon, salt and nuts together. 

Fold dry ingredients into liquid mixture until just combined; do not overmix.

Divide batter evenly into prepared muffin cups.  Bake in preheated oven for about 18 minutes.

Check for doneness using a toothpick inserted into the center of a muffin; if toothpick comes out clean, muffins are done.

Cool for 5 minutes in the muffin tin before releasing to serve.

 

NOTE:  For blueberry muffins, substitute 1 cup fresh or frozen blueberries for the apples.
