Pumpernickel Bread for Bread Machine

This is the perfect pumpernickel bread. Hearty with a touch of sweetness and easy because it is made in a bread machine.



The trick to making this bread in your machine is an extra knead, which gives the yeast and gluten a second chance to create a lighter loaf.

Prepare by placing ingredients in bread maker as per manufacturer instructions. Select Whole Wheat setting.  If your machine doesn’t have a Whole Wheat cycle, our start-again method that follows works as an easy alternative.

Start-again method: When your first knead cycle is completed, simply reset the machine and start again. 

It is not unusual for the top to be slightly honey-combed.
