Veggie Mushroom Tomato Sauce

This sauce is full of fresh veggies and seasoned just right, add organic pasta for a perfect meal.


  • 3 Tbsp. olive oil
  • 2 onions, medium, chopped
  • 2 cups mushrooms, diced
  • 1 bell pepper, medium, chopped
  • 2 cups zucchini, or summer squash, chopped
  • 1 15oz. can tomato sauce
  • 1 28oz. can chopped tomatoes, undrained
  • 1 6oz. can tomato paste
  • 1/2 cup water
  • 2 tsp. italian seasonuing
  • 2 tsp. sugar
  • 1/4 tsp. garlic powder
  • 1/4 tsp. black pepper, ground


In large skillet over medium heat, heat 1 Tbsp. olive oil. Add onion, mushrooms, bell pepper and zucchini and sauté until onions are tender and translucent. Stir in rest of ingredients; bring to a boil. Reduce heat; simmer 20 minutes, stirring occasionally

Serve over 1 box (12 oz.) cooked Hodgson Mill Organic Whole Wheat Penne Pasta.
