Banana Brunch Cake

Ingredients

  • 2-1/2 cup Hodgson Mill Multi Grain Buttermilk Pancake Mix
  • 1-1/2 cup banana, mashed (about 4 medium)
  • 3/4 cup brown sugar, packed
  • 3/4 cup milk, skim milk
  • 1/4 cup applesauce, unsweetened
  • 2 Tbsp. butter, unsalted, melted
  • 1-1/2 tsp. cinnamon
  • 1 egg
  • 1/2 cup walnuts, chopped, optional

Directions

Heat oven to 350°F.  Grease 13x9- inch baking pan.  Combine pancake mix, 1/2 cup brown sugar, and cinnamon.  Add banana, milk, egg, and applesauce;  mix well. Spread into prepared pan.  Combine nuts, 1/4 cup brown sugar and butter;  sprinkle evenly over batter.  Bake about 30 minutes or until golden brown.
