Cracked Bulgur Wheat Muffins

A hearty cinnamon muffin with tender grains of Bulgur Wheat and sweet pockets of fruit

Ingredients

Directions

Heat oven to 425°. Grease or line 12 muffin cups.

Beat eggs slightly, stir in milk and melted butter or oil.  Sift dry ingredients together.  Combine dry ingredients with wet ingredients until flour is moistened.  Do not over mix. Fold in raisins/dates, if using.
 
Fill greased muffin cups 2/3 full.Bake 15-20 minutes.
Sprinkle the top of muffins lightly with a sugar-cinnamon mixture before baking (optional).
