Whole Wheat Bow Tie Pasta with Tomatoes, Oregano, Basil and Feta Cheese Sauce

With a few kitchen staples like healthy Whole Wheat Bow Tie pasta, canned tomatoes, dried herbs and feta cheese, dinner is easy to put together.

Preheat oven to 400ºF. Prepare an 8-inch or 9-inch baking dish with nonstick spray or olive oil.

Cook pasta according to package directions. Drain, cover, keep warm and set aside.  In a small bowl mix tomatoes, oregano and basil together; set aside.   Next, melt butter in a medium-sized sauce pan and then add garlic, cooking until fragrant, about 1 minute.   Add flour and cook for 1 minute, stirring constantly to avoid lumps.  Slowly add milk, whisking continually, and then bring to a boil.  Reduce heat and simmer, stirring contantly, about 3 minutes or until sauce thickens. Remove pan from heat and stir in half of the feta cheese. Next, stir in tomato mixture and cooked pasta.  Pour pasta mixture into an 8- or 9-inch baking dish sprayed with non-stick cooking spray and sprinkle remaining feta cheese on top.  Bake in a 400° F oven for 20-25 minutes or until the sauce is bubbly and the cheese is browned.  Serve warm.
