Apple Pupcakes

2 3/4 c water
1/4 c unsweetened applesauce
2 Tbsp. honey
1 medium egg
1/8 tsp. vanilla extract
4 c HODGSON MILL WHOLE WHEAT GRAHAM FLOUR
1 cup apple chips, dried
1 Tbsp. baking powder

Preheat oven to 350 degrees. In a small bowl, mix together water, applesauce, honey, egg, and vanilla. In a large bowl, combine flour, apple chips and baking powder. Add liquid ingredients to dry ingredients and mix until very well blended. Pour into greased muffin pans, bake until a toothpick inserted in the center comes out dry. Store in sealed container.

Makes 12-14 pupcakes.

Makes 1 batch. Each batch: 145 calories; 4 g dietary fiber; 32 g carbohydrates; 4 g protein; 2 g fat (less than 1 g saturated fat); 15 mg cholesterol; 96 mg sodium.
