Banana Brunch Cake

2 1/2 c HODGSON MILL MULTI GRAIN PANCAKE MIX
1 1/2 c mashed ripe bananas (about 4 medium)

3/4 c packed brown sugar

3/4 c skim milk
1/4 c applesauce, unsweetened
2 Tbsp. butter, unsalted melted
1 1/2  tsp. cinnamon
1 egg
1/2 c chopped walnuts (optional)

Directions:

1. Heat oven to 350°.

2. Grease 13" x 9" baking pan.

3. Combine pancake mix, 1/2 c. brown sugar, and cinnamon.

4. Add banana, milk, egg, and applesauce;  mix well. 

5. Spread into prepared pan.

6. Combine nuts, 1/4 c brown sugar and butter; sprinkle evenly over batter.

7. Bake for 30 minutes or until golden brown.

12 servings.
