Buttermilk Biscuits

2 c HODGSON MILL OAT BRAN HOT CEREAL
3 tsp baking powder
2 tsp granulated sugar
1/2 tsp cream of tartar
1/4 tsp salt
1/4 c peanut oil
1/3 c buttermilk

In a food processor fitted with steel blades or in a blender, mill the oat bran hot cereal until fine and flour like, about 2 minutes. Preheat oven to 450 degrees F. In a medium-sized mixing bowl, stir together 1 3/4 cups oat bran hot cereal with baking powder, sugar, cream of tartar and salt. With pastry blender, cut in peanut oil until mixture resembles coarse granules. Make a well in the center of the mixture and pour all buttermilk in at one time. Stir until dough clings together.

Place on a surface which has been sprinkled with the remaining 1/4 cup oat bran and knead gently for 1 minute. Pat to 3/4-inch uniform thickness. Cut with a 2-inch biscuit cutter which is well coated with flour.

Place biscuits on an ungreased baking sheet and bake for 10 to 12 minutes or until biscuits are golden brown.

Makes 12 servings. Each serving: 126 calories; 4 g. dietary fiber; 16 g. carbohydrates; 4 g. protein; 7 g. fat; 2 g. saturated fat; 0 mg. cholesterol; 157 mg. sodium.
