Chuck Wagon Casserole

1/2 pkg. HODGSON MILL WHOLE WHEAT VEGGIE BOWS
1 lb. lean ground beef
1 medium onion, chopped
3/4 c celery, chopped
1 can (15 oz.) tomato sauce
1 can (10 oz.) diced tomatoes and green chilies
1 can (14.5 oz.) diced tomatoes
salt & pepper to taste
hot sauce or cayenne pepper, optional*
2 c finely shredded sharp cheddar cheese

Preheat oven to 350 degrees F. Lightly coat a 4 qt. casserole with cooking spray. Prepare 1/2 package of Hodgson Mill Veggie Bows according to package directions. Drain, do not rinse. In a large skillet, saute ground beef, onion and celery; drain off any liquid.

In a large bowl, place the beef mixture, hot pasta and tomato products; mix together. Add salt, pepper or spices if desired. Place half of the mixture in the prepared dish and top with 1 cup cheese. Repeat layers and bake at 350 degrees F for 30 - 35 minutes.

Makes 6 servings. Each serving: 418 calories; 4 g. dietary fiber; 41 g. carbohydrates; 30 g. protein; 18 g. fat; 10 g. saturated fat; 80 mg. cholesterol; 1003 mg. sodium.

*For a spicier dish add hot sauce or cayenne pepper.
