Festive Seafood Salad
1/2 pkg. HODGSON MILL VEGGIE ROTINI
1 pkg. (8 oz.) imitation king crab meat
1 roma tomato, diced
1 c zucchini, diced
1 carrot, shredded or cut in match sticks
3 Tbsp. fresh chives
1 c fat-free ranch salad dressing
1/2 c shredded fresh Parmesan cheese
salt & pepper to taste
Prepare pasta according to package directions; rinse and drain. Combine vegetables, salad dressing, cheese, and cooled pasta; toss lightly to blend. Chill for 1/2 hour before serving.
