Gluten Free Chocolate Chip Cookies

3/4 c HODGSON MILL SOY FLOUR
1/4 c HODGSON MILL BROWN RICE FLOUR
1/2 tsp salt
6 1/2 Tbsp. butter
6 Tbsp. white sugar
6 Tbsp. brown sugar
1/2 tsp vanilla
1 egg
1/2 c chocolate chips
1/2 c nuts

Sift dry ingredients. Beat together sugar and butter, add eggs and beat again. Stir vanilla, add the dry ingredients, chips and nuts. Drop by spoonful onto greased cookie sheet. Bake at 375 degrees F for 10 to 12 minutes.

Makes 24 servings. Each serving: 98 calories; <1 g. dietary fiber; 12 g. carbohydrates; 3 g. protein; 5 g. fat; 1 g. saturated fat; 9 mg. cholesterol; 73 mg. sodium.
