Lightly Carmeled Bran Cake
Cake
1 1/4 c very hot water
1 c HODGSON MILL UNPROCESSED WHEAT BRAN
1/2 c butter
1/4 c white sugar
1/2 c brown sugar
2 egg whites
1 tsp vanilla
2 c HODGSON MILL UNBLEACHED WHITE FLOUR
1 tsp cinnamon
1 tsp baking soda
1/4 tsp salt
Topping
3 Tbsp. melted butter
1/4 c brown sugar
1/2 c chopped walnuts or mixed nuts
1/4 c HODGSON MILL UNPROCESSED WHEAT BRAN
Combine water and bran. Let stand 2 to 3 minutes while creaming the butter and sugars. Add egg whites, vanilla and bran mixture. Beat well. Add flour, cinnamon, soda and salt. Mix well. Pour into greased and floured 9x9 inch pan. Bake at 350 degrees for 30 to 35 minutes.
Combine topping ingredients and spread on hot cake. Broil until bubbly (about 2-3 minutes).
