Organic Jump Start Cookies

1 c HODGSON MILL 50/50 FLOUR
1/2 c HODGSON MILL ORGANIC SOY FLOUR
1/4 c HODGSON MILL UNPROCESSED WHEAT BRAN
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 c soybean oil (vegetable oil)
1/2 c brown sugar, packed
1 egg
1/2 tsp vanilla
1/4 c water
3/4 c quick cooking oats
1/4 c chopped nuts
3 Tbsp. granulated sugar

Preheat oven to 350 degrees F.

In a mixing bowl, blend together the first six ingredients and set aside. In another bowl, mix oil, sugar, egg, vanilla and water together. Add dry ingredients and mix until smooth. Stir in oats and nuts. Roll dough by hand into 1-inch balls. If the dough is too sticky, chill it for l hour.

Place the cookie balls on a lightly greased baking sheet about 3 inches apart; flatten with bottom of a glass dipped in sugar. Cookies should be about 1/4-inch thick. Bake at 350 degrees F for 13 - 15 minutes. Cool cookies on a rack.

Makes 36 servings. Each serving: 72 calories; 1 g. dietary fiber; 8 g. carbohydrates; 2 g. protein; 4 g. fat; 1 g. saturated fat; 6 mg. cholesterol; 41 mg. sodium.
